Peanut Butter Blossoms
Another one of my strongly held baking opinions: peanut butter and chocolate are the perfect combination.
Ingredients
48 Hershey’s kisses (I also use pieces of a Hershey bar because they’re easier to place and you get more chocolate in each bite)
1/2 cup shortening
3/4 cup peanut butter
1/3 cup granulated sugar
1 egg
2 tablespoons milk
1 teaspoon vanilla extract
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2/3 cup granulated sugar
Instructions
Preheat oven to 375 and remove the wrappers from the kisses
Beat the shortening and peanut butter together in a bowl, then add 1/3 cup of the sugar and beat until it is fluffy
Add the egg, vanilla, and milk and beat well
Combine flour, baking soda, and salt in a separate bowl
Gradually beat the dry mixture into the large bowl
Take the dough and make 1 inch balls
Roll the balls in the remaining granulated sugar and place them on the baking sheet
Bake for 8-10 minutes or until browned
Once they are out of the oven, place a piece of chocolate in the center of each cookie, then place on a rack to cool
